Lao Lop (Laos Tacos)
2 lbs chicken brown in oil w/ 2 large cloves garlic and sauce
Sauce:
2 T fish sauce
1/2 T honey
1 t crushed chili peppers
1/2 t sea salt
1 T lemon juice
Cook with lid on,
*Pour broth off to another pan and add water to the broth to double.
*Add 2 T fish sauce, 1 chopped green onion, 1 t chili peppers to the broth.
*Add 1 can chicken broth to chicken and boil, turn off.
*Drain that broth off into the pan of broth you drained before, use for dipping! Yum!!
(Or pour over salad of lettuce, rice, veggies and meat)
*Cook pearl rice or sticky rice (1 c rice to 2 c water serves 2 people well)
*Peel, halve and scoop out seeds of 3 cucumbers, cut into cubes, chop 1 tomato, put in bowl and cover with
2 cloves garlic– chopped fine
1 t honey
1t lemon juice
1/2 t sea salt
2 t fish sauce
1 t crushed chili peppers.
Serve rice, meat, veggies on romaine lettuce leaves like a taco shell, roll and dip in sauce
We alter this by making a bed of lettuce, then brown rice, then veggies, then meat and finally the sauce. Less messy and still just as tasty. :)
Best Potato Soup
2/3 c butter
2/3 c flour
7 c milk
4 large potatoes, peeled, boiled, cubed
4 green onions
12 bacon strips, cooked and crumbled
1 1/4 c shredded cheddar cheese
1 c sour cream
3/4 t salt
1/2 t pepper
*Melt butter in soup kettle
*stir in flour, heat and stir till smooth
*Add milk stirring till thickened
*Add potatoes and onion, boil stirring constantly
*reduce heat, simmer 10 mins
*Add remaining ingredients, stir till cheese melts
Serve in a bread bowl and sprinkle with cheese!
Cinnamon Butter Cookies
1 c softened butter 2 t cream of tartar
3/4 c honey 1 t baking soda
2 eggs 1/4 t real salt
2 3/4 c spelt flour 2 t cinnamon
Instructions:
Cream together butter and honey.
Beat in egg.
In separate bowl mix together
dry ingredients.
Then add dry ingredients to the butter/honey/egg mix.
Mix well till all is moistened.
Chill dough 30-60 mins before rolling into 3/4”-1” balls. Do not leave in the fridge longer than 60 minutes.
Bake on an ungreased cookie sheet at
350 degrees 10-12 mins.

Sandwich Bread
Grind 5 cups of spelt (about 8 cups of flour) You can use wheat, I prefer spelt...
Measure the following into Kitchenaid mixer in this order...
2 3/4 cups water, room temp or slightly warm
1/4 c oil, I use grapeola but you can chose any healthy oil
1/4 c honey, I prefer local, raw honey, you can even use a bit more for sweeter dough
1 1/2 tsp salt, I use Real Salt
1 1/2 tsp lecithin granules
1/8 tsp vitamin C powder
4 c flour
1/2 c vital gluten
1 3/4 Tbl yeast (I buy the big bag at Costco)
Use your stir setting with the paddle attachment. Turn speed to 2 and gradually add remaining flour 1/2 c at a time. When dough no longer sticks to the sides of the bowl I switch to the dough hook and add any remaining flour if needed. I was told that at that point you can knead on 2 for 15 minutes or 10 minutes on 4, till a good stretch is achieved. But honestly at that point I prefer dumping onto an oiled counter top and kneading by hand. Then shape this into 2 loaves and let rise about 1 hour. Place in a cold oven and turn to 350 degrees for 30 mins or till browned. Turn out on racks to cool.
Dinner rolls for Thanksgiving :)
3 3/4 c Unbleached unbromated flour
1 pk yeast
1 1/4 c milk
3 T Evaporated Cane Juice (or sugar)
1/4 c Earth Balance (or butter)
1/2 t sea salt
1 egg or 2 whites
In a large mixing bowl, mix 1 1/2 c flour and yeast.
In a medium sauce pan, heat and stir milk, “butter”, sugar and salt till butter almost melts.
Add to flour mixture, add egg, beat on low for 30 seconds, then 3 minutes.
Stir in remaining 2 1/4 c flour.
Can chill in fridge up to 3 days, or freeze up to 3 mo, making it nice to make ahead for holidays.
Divide dough and make rolls either in knots or balls. Place on greesed baking sheet (I prefer a seasoned stone.) Let rise till nearly double in size. Bake 375 for 10-12 minutes till golden brown. Recipe makes 24 rolls.
